
Hello friends and happy Monday!
I hope that you all had a pleasant weekend π Seeing that today is Monday and that it is indeed a new week, and almost new month, I thought I would hop on here and share my meal plan for the week with you all! I love doing these posts because it is fun for me to share with you all what I am up to in the kitchen BUT also it helps to force me to be on top of planning out my meals for the week. It’s a win-win situation!
This Week’s Meal Plan
Monday 9/30:
B: Pumpkin spice bagel (from Dave’s Killer Bread) & reduced fat cream cheese – I rave about Dave’s Killer Bread in almost, if not all, of my meal plan posts and it’s because I am obsessed. Dave’s Killer Bread is free from gross additives (like high fructose corn syrup) and is packed with whole-grain nutrition, protein, and depending on the product, has awesome additions such as flax seeds for additional nutritional benefit. I love this stuff. I have said this before and I will say this again, this is the only bread I buy these days.
L: green smoothie
D: Green chile enchiladas (recipe) – I was going to make this last week but went to a college reunion here in Portland and ended up staying out too late to make them BUT I will make these today π
Tuesday 10/1:
B: oatmeal or green smoothie
L: leftover enchiladas or avocado toast
D: Stuffed sweet potatoes
Wednesday 10/2:
B: oatmeal or green smoothie
L: avocado toast
D: Walnut cream pasta w/ sweet potato – Ian and I made this last week and OH MY GOSH it was SOOO GOOOD. I am going to try remaking this again this week to see if I can perfect the recipe but will be sure to share the recipe with you all sometime soon because.. it is awesome and you all should try it (if you can eat walnuts/ like walnuts).
Thursday 10/3:
B: oatmeal or green smoothie
L: avocado toast or a bar & greek yogurt
D: whatever I find – I will be travelling Thursday and will most likely just eat something in the airport.
Friday 10/4:
B: coffee & whatever I can find
L: out for lunch
D: airport food
Saturday 10/5:
B/L: smoothie or pumpkin bagel
D: OUT
Sunday 10/6:
B/L: smoothie or avocado toast
D: pumpkin chili (recipe)
Ian and I typically try to do our grocery shopping at our local Fred Myers since they have the best prices BUT this week we will probably shop at Trader Joes since I am going to be travelling. Trader Joes is great for when you need smaller portions AND for when your lovely fiance doesn’t feel like cooking when you are away :p We will probably pick up some frozen dinners for Ian to eat while I am travelling on Thursday and Friday.
As for my usual weekend recap posts, I will not be posting one this week. I mentioned in my Chicago recap post that Ian’s grandmother had passed away, so we spent our weekend with his family and saying our goodbyes. I really wanted to be present and there for Ian and his family, so no photos were taken. I am sure you all understand β€
This week I have A LOT going on, so I am sure that next week will have an interesting recap post published on here π It’s crazy to think that September is already over BUT I am so excited for what is in store for us this October. After all, October is my favorite month of the year π

Hi, Brittany! Hope your week has been well so far. I am envious of how you have planned a full week of meals! I decide either that day or the night before, haha. I wish I were more organized! I hope your college reunion went well! Pumpkin chili sounds super interesting. I’m not a big fan of pumpkin flavored anything, but that sounds like an interesting combination!
Nashville is getting a Trader Joes soon, I’m just not sure where it is, but I’ve never been to one before, but I’ll be sure to go once it opens! It’s somewhat starting to get cooler here, which is such a relief, but next week will be hot again, ugh. Safe travels and lots of fun to you!

And as for meal prepping, it can be a little time consuming upfront but I feel that it saves me time and energy during the week. However, I do not have enough motivation to cook all of my meals on Sunday like I know some people do. That just seems like A LOT of work to me!
And yay for Trader Joes! I love shopping there π I do not go often.. but when I do.. Ian has to drag me out of there π

Yeah, that’s a smart idea that I realllly should implement in my schedule instead of going on the fly. I still don’t even know what to make tonight, so I’m gonna wing it again! It sounds like a place where I’ll probably have to have Stephen do the same! π

Oh man, I didn’t know Dave’s Killer Bread made pumpkin bagels! UGH I need Whole30 to end now. I’ll have to give your pumpkin chili a try as well. Sounds so good.

Oh no!! I almost tried doing Whole30 this month but it’s my birthday month.. so I didn’t want to not celebrate with some cake haha
