A Birthday Celebration, Fall Leaves, & an Art Show πŸ‚πŸŽ¨πŸŽ‚

Hello friends!

It has been a minute since I have been on here! Last we spoke, I was sharing my meal plan for last week and letting you all know that I had a crazy week planned. With everything going on last week I did not have the time or energy to hop on here and chat with you all, so I am finally back to say hello now that things are somewhat calmer.

Last week was definitely a bit hectic. Ian and I went to his grandma’s funeral on Monday, were busy with work, and had errands to run back and forth from. By the time it was the weekend we were so excited to just relax.. but we actually ended up doing very little of that. My brain woke me up at 7:00 am Saturday morning for no reason at all.. and Sunday wasn’t much better seeing that I woke up at 7:30 am thanks to the Portland Marathon taking place right outside our window πŸ˜‚

Saturday – Ian goes to the Dentist

Saturday morning, Ian and I headed over to his dentist’s office to get his teeth cleaned. It was our first time seeing this dentist and honestly.. I don’t think we will continue going there. I have had a few bad experiences in the past with dentists misdiagnosing my cavity count and such, so I may be overly cautious when choosing a dentist… but I think the place Ian went to was looking to make a little extra money. They managed to estimate Ian’s cleaning & cavity fillings (for 2 cavities) to be around $3,500. I don’t know about you all.. but my dentist I see does not charge that much for getting routine teeth cleaning & cavity fills. It also took them 2 hours to clean 1/4th of Ian’s teeth… Mind you, Ian’s teeth are not in horrible condition.. so 2 hours is kind of ludacris in my opinion.

Once Ian’s dentist appointment was over, we headed over to Panera for lunch and then ran a few errands. I then started baking Ian’s mom a cake for her birthday on Sunday. She always makes each of her sons a special birthday cake when it’s their birthday.. so I figured she would appreciate someone makingΒ herΒ a cake this time!

After baking for what ended up being a few hours, I was wiped.. so I headed to bed atΒ 9:00 pm.Β 

Sunday – Birthday Celebration & Art Show Fun!

After waking up to people cheering Portland Marathon runners on at 7:30 am, I got back to finishing up Ian’s mom’s birthday cake. I made the cake on Saturday night but saved frosting the cake for Sunday.

The frosting turned out to be an absolute nightmare. I used a strawberry cake recipe found here, but nothing seemed to turn out just as the recipe said it was supposed to. The cake batter tasted amazing.. but did not rise at all in the oven.. in fact, I think it actually shrunk a bit? It also said that there would be enough batter for 3 9-inch cake rounds and well.. I had enough for 2…

Batter aside, the frosting did not turn out at all. In the recipe, there was a note to whip the heavy whipping cream until stiff to prevent it from becoming runny. Not wanting a runny frosting, I whipped the freaking whipping cream for aΒ very long time.Β However, when it came to mixing the whipping cream mixture into the cream cheese frosting mixture.. it all went to goop. Like, it looked more like icing than frosting. It was so frustrating for me! I made sure to following the recipe step-by-step and was left with goop. *Sigh*

After letting out a few not-so-nice words and a few times of throwing my hands up in the air, I decided to try againΒ butΒ this time to make a simple buttercream frosting. Thankfully the buttercream frosting turned out significantly better BUT layering it ontop of goopy frosting was not easy. The goop would lift off of the cake when I tried layering the new frosting ontop. Guys, the #strugglewasreal.

I ended up talking with my grandma afterwards about how awful the frosting turned out and she laughed when I told her that I had used heavy whipping cream to make the frosting. Maybe this frosting might have worked if I quickly threw it into the fridge and kept the cake in the refrigerator at all times. UGH. Lesson learned: always call your grandma when attempting a new recipe that involves making any baked good. Grandma knows best!

After struggling with frosting the cake for a few hours, we headed over to Ian’s mom’s art show! This year it was held at the World Forestry Center, which was actually really cool. Parking was easy to find, the trees all around the venue were gorgeous, and the interior of the venue was also very nice. Overall, it was a great location to host an art show at!

Before helping Ian’s mom take done her work, we walked around the show and took in all of the artwork that was on display. Walking around there honestly made me want to pull out my camera and get back into photography (although I have been actually getting back into it πŸ˜‰ ).

I also thought the ceiling looked pretty cool πŸ˜‚.

After the show, we helped Ian’s mom pack up and we headed out to celebrate her birthday with her!

Ian and I got to the restaurant before she did, so we took a few photos. OK I requested that Ian take photos of me next to a tree. It was super red and pretty AND I just wanted a photo with it OK!

While waiting, we walked around downtown Sellwood and looked around in one of their antique shops.

Once we were ready for dinner, we headed over to Muddy Rudder for some birthday pizza πŸ™‚

We had never been to Muddy Rudder before but we were digging its cozy atmosphere. They even had a fiddler and archodian player! How neat! Oh and the pizza was pretty darn good too πŸ™‚

And there ya have it! My weekend in a nutshell!

While I would love to say that this week is going to be calmer, it will not be πŸ˜‚I can’t wait to just slow down and take it easy BUT so many exciting things are happening right now so it’s fine. Here is what we have on the agenda for the rest of the week:

  • Today – get my haircut & have our engagement photos taken!! I am so excited!!!
  • Friday – go to a ballet where Ian’s aunt is playing the harp! I am also very excited about this! I haven’t been to a ballet in yeeears.
  • Saturday – brunch with one of my coworkers
  • Sunday – celebrate Ian’s nephew’s 2nd birthday

    1. Ahh yes I remember when I lived in the Bay Area it always seemed to take forever for fall to roll in. In fact, I remember the trees outside of my apartment were all in full fall bloom in.. JANUARY?!! Hang in there! The trees might change eventually!

  1. Ugh your pics kill me! It looks sooo fallish there. I’m so jealous. Its still 90 and sunny in Atlanta. Luckily, I spent a few days in NYC and got a little taste of fall. Love your pics.

    That dentist definitely seems like a scam– don’t blame ya for not wanting to go back there. The cake you made sounds like it was a frustrating process but the end result it so cute! It was so sweet of you to make for her. πŸ’– I love art shows & adorable downtowns like Sellwood!!

    Can’t wait to see the engagement photos (if you decide to share them on here!) & I hope the ballet was amazing!!

  3. Omg the price of a dentist’s services there :O And I’ve been grumbling that I have to pay 200 euros for a dental hygienist to clean my teeth!!! The cake sounds like the ones we make here in Finland. We just whip cream on top and add strawberries. It’s not exactly runny but it’s not like frosting either. The cake looks gorgeous! Fall has been great here too but now all the leaves are on the ground. I’ve been raking for hours, now the yard is ready for snow.

    1. Ugh I feel your pain! Dental appointments can be quite costly.. even with insurance!

      And oh I would love to try the cake there in Finland! It would probably be a lot better than the one I made πŸ˜‚
