Meal Plan (10/14-10/20)

Hello friends!

I am back with this week’s meal plan. I wanted to have this planned and up Sunday night.. but I was exhausted and went to bed instead! Sometimes you just have to choose sleep over other things.. like writing on here πŸ˜‰

Anywho, I hope that you all enjoy this week’s meal plan. I honestly enjoy posting these 1) to organize myself and to find recipes faster 2) to help my friends & family discover new recipes! I can get lazy with making new food, so I like planning ahead and sharing recipes I find with you all πŸ™‚

Monday 10/14:

B: oatmeal

L: chickpea pasta w/ autumn pasta sauce from Trader Joes (every year when this sauce comes out I stock up!)

D: Chimichurri beef, Mexican rice, & veggies

Tuesday 10/15:

B: greek yogurt

L: avocado toast

D: Vegan Buddha Bowl (recipe)

Wednesday 10/16:

B: greek yogurt

L: avocado toast

D: Pasta w/ sweet potato & walnut creamΒ  (Ian and I are OBSESSED with making this – I will be sure to share our recipe soon!!)

Thursday 10/17:

B: greek yogurt

L: green smoothie

D:Β Cheesy Spinach Artichoke Stuffed Spaghetti Squash (recipe)

Friday 10/18:

B: green smoothie

L: avocado toast

D: Pasta w/ autumn TJ’s autumn pasta sauce, chicken sausage, & veggies

Saturday 10/19:

B/L: coffee & protein pumpkin muffin

D: OUT

Sunday 10/20:

B/L: pumpkin pancakes & coffee

D: Vegan Roasted Sweet Potato Salad (recipe)

  1. I’m still into pumpkin! Give me another week or two and I might be singing a different tune. Avocado toast sounds delish. Any points on keeping it fresh longer?

    1. Yeah, I am sure I will be over in a week or two as well!

      And yes! For avocados you can keep them fresh in the fridge after cutting them open by placing them (with their pit) in a container and drizzle lemon juice on them. They usually last me a few days that way. There will be a little browning but it is just at the surface. Cut the brown off and you will be fine!
