Meal Plan (10/21-10/27)

Hello and happy Monday!

I finally am on top of things and have this ready to be posted in the morning on Monday rather than my usual Tuesday or Wednesday afternoon – go me!

Anyway, I am sharing this meal plan with you all BUT I am not 100% confident that I will be able to follow my plan this week. With my birthday being this week AND me getting Friday off at work.. I may or may not stick to my plan. That being said, you are more than welcome to use my plan for this week as a source of food inspiration!


Monday 10/21

B: Greek yogurt

L: Leftover walnut sweet potato pasta (pictured above!)

D: Ginger-Coconut Pork with Butternut Squash (recipe) – slow cooker recipe!

Tuesday 10/22

B: Greek yogurt

L: Avocado toast

D: OUT – for my birthday πŸ™‚

Wednesday 10/23

B: Smoothie

L: Avocado toast

D: Tuscan Bread Soup with Beans (recipe) – slow cooker recipe!

Thursday 10/24

B: Greek yogurt or smoothie

L: Leftover bread soup (from dinner above)

D: Pear, prosciutto, and fontina quesadillas (recipe)

Friday 10/25

B: Greek yogurt or smoothie

L: Leftover quesadilla or avocado toast

D: Potentially out? Might decide on this last minute.

Saturday 10/26

B/L: Greek yogurt

D: Chicken Parmesan Meatballs w/ Spaghetti Squash (recipe)

Sunday 10/27

B/L: Pumpkin protein pancakes

D: Pasta w/ Autumn Squash Pasta Sauce (from Trader Joe’s) & Chicken Sausage


As I said, this meal plan is subject to change. There are a lot of things up in the air right now this week for me, so it might be possible that Ian and I are running around and do not have time to make a meal. It happens!
